Freeze drying is a water removal process typically used to preserve perishable materials, with the goal of extending their shelf life and/or preparing them for storage or transport.
Freeze-dried candy will have its flavor, color compounds, and aromas preserved, while its texture is completely transformed. The freeze-drying process results in an enhanced and concentrated taste profile and improved crunch.
The freeze drying process is not a simple dehydration process. It can be expensive due to the complicated equipment required to maintain a high vacuum level during the drying process to allow sublimation.
It is a bit of a lengthy process too. It can take anywhere between 20 to 40 hours, depending on the food. In general, the more water content it has, the longer it will take to freeze-dry. But some candy can be done in as little as 4-6 hours!
We are a home-based kitchen providing high demand favorites with nutritional choices. Many of the foods freeze-dried are sourced right here in Michigan.
